First, Berry Sweet
Ah, the sultry sweetness of… salad prepared with vinegar?
This curious effect is the result of a protein’s tricks. It is called miraculin and found in the miracle berry, a red berry native to West Africa. Miraculin itself doesn’t taste sweet, but it binds to sweetness receptors on the tongue and blocks them at neutral pH.
Eat something acidic, though — like that salad with vinegar or a lemon — , and the lowered pH activates the miraculin, which then fires those receptors, tricking you into perceiving sour foods as sweet.
That’s how a tiny molecule can transform sour into sweetness. Now, how about performing a similar kind of transformation — turning plain notes from Apple Notes into polished documents in Pages… at a flick of the tongue?
