Before cheese rests to age and develop its full flavor, it usually takes a bath in brine. The brine contains much more than salt and water, though.
The unique blend of microbial (mostly yeast) cultures found in the individual brine contributes much to the cheese’s unique character. So, much like a sourdough starter, the cheese brine bath is kept, used and reused over years, decades and centuries.

Using the Windows US-International Keyboard Layout
Time needed: 2 minutes
To type the Euro symbol ( € ) directly using the keyboard using the US-International keyboard layout on Windows:
- Add the United States-International keyboard layout to Windows.
Here’s why: The US-International keyboard layout offers direct access to the Euro symbol on the keyboard; the standard US-English keyboard layout does not include a key or key combination for ‘€’.
- Switch to the US-International keyboard layout.
Here’s how: You can press Windows Space to switch keyboard layouts or use the Windows taskbar.
- Position the text cursor where you want to insert the Euro sign.
Here’s where: The Euro sign precedes the number in English text (other languages do have the Euro sign follow the number, however).
Space: While the Euro symbol should not be separated from the amount (according to EU instruction guidelines), inserting limited whitespace can increase legibility, however; always use non-breaking space or non-breaking narrow space between the Euro sign and numbers that are denoted with it. - Press AltGr 5.
Example: “Clara just spent €346.30 on stapler supplies.”
